I love this time of year when the hope of spring is just around the corner! My little Crocuses are popping up all over my flowerbeds! I cannot wait for the warm weather to arrive and the chance to play outdoors!
I made this delicious Almond Poppy Seed Cake last night . . . umm, umm good!! I just have to share the recipe because it is so easy and so moist. I have made it twice in the last two weeks! So, if you are looking for a great dessert that is fast and easy, here it is!
Almond Poppy Seed Cake
1 Yellow Cake Mix (without the pudding)
1 sm. package of Jello French Vanilla Pudding
1 cup of sour cream
1 cup of sour cream
1/2 cup of water
4 eggs
1/2 cup of canola oil
2 Tbs. Poppy seeds
2 Tbs. Almond extract
**Mix all of the ingredients together in a bowl. Blend for 3 minutes. Pour into a grease bunt pan. Cook at 350 degrees for 40-50 minutes. Let sit for 10 minutes before turning over.**
I glazed mine with a powdered sugar, milk, and almond extract frosting but you can use whatever you want or nothing at all.
